INGREDIENTS
- 25g butter
- 1 red onion finely diced
- 4 peppers (capsicums)
- 500g beef mince
- 2 cloves garlic crushed
- 100g button mushrooms finely diced
- 2 tsp dried thyme
- 2 tsp dried oregano
- 1 rasher smoky bacon diced
- 100g cheese grated
- 400g tin chopped tomatoes
INSTRUCTIONS
- Heat the butter and fry the onion and garlic.
- Add the mince and brown thoroughly.
- Add the remaining ingredients, and stir.
- Simmer on a low heat for 15 minutes to reduce the liquid and thicken the mixture. Stir occasionally.
- Cut the tops from the peppers and then cut in half.
- Press the mince mixture into each pepper firmly, then place in the baking dish.
- Sprinkle with grated cheese.
- Bake at 180C for 20 minutes.
