STUFFED PEPPERS - ditch the carbs

INGREDIENTS
  • 25g butter
  • 1 red onion finely diced
  • 4 peppers (capsicums)
  • 500g beef mince
  • 2 cloves garlic crushed
  • 100g button mushrooms finely diced
  • 2 tsp dried thyme
  • 2 tsp dried oregano
  • 1 rasher smoky bacon diced
  • 100g cheese grated
  • 400g tin chopped tomatoes
INSTRUCTIONS

  1. Heat the butter and fry the onion and garlic.
  2. Add the mince and brown thoroughly.
  3. Add the remaining ingredients, and stir.
  4. Simmer on a low heat for 15 minutes to reduce the liquid and thicken the mixture. Stir occasionally.
  5. Cut the tops from the peppers and then cut in half.
  6. Press the mince mixture into each pepper firmly, then place in the baking dish.
  7. Sprinkle with grated cheese.
  8. Bake at 180C for 20 minutes.
