INGREDIENTS
6 boneless chicken thighs6 tbs cream cheese1 slice bacon dicedhandful spinachfinely grated parmesan

INSTRUCTIONS
Slice each chicken thigh so it will be large enough to roll up once the filling has been placed on it.Place the chicken on the chopping board. Add some spinach, then cream cheese, then bacon pieces.Roll up the chicken piece and place it in the baking dish so the join is face down.Repeat with all the chicken pieces.Sprinkle with finely grated parmesan.Bake at 180C/350F for 30 minutes or until the chicken is cooked in the centre.
