Healthy nachos - ditch the carbs

INGREDIENTS

500g beef mince1 red onion quartered and sliced2 cloves garlic crushed400g tin kidney beans drained (optional)1 tbs ground cumin1 tsp ground chilli1 tbs dried coriander1 tsp smoked paprika1 tsp dried oregano400g tin diced tomato(or use 400g tin mild chilli kidney beans in place of the kidney beans and the herbs/spices)

INSTRUCTIONS

Heat some oil in a saucepan and gently fry the onion and garlic until cooked but still soft.Add the mince and continue to cook and stir until the meat is browned.Add the herbs, spices, tomatoes and kidney beans (optional). Stir.Simmer and occasionally stir for 15 minutes while you prepare the vegetables and avocado salsa.
