LOW CARB PIZZA WAFFLES - ditch the carbs

LOW CARB PIZZA WAFFLES

INGREDIENTS
  • 5 eggs separated
  • 4 tbs coconut flour
  • salt to taste
  • 1 tbs dried herbs of choice - I use rosemary and oregano
  • 1 tsp baking powder
  • 125g / 4.5oz/ 1 stick + 1 tbs butter, melted
  • 3 tbs full fat milk
  • ½ cup grated cheese
INSTRUCTIONS

First bowl.
  1. Whisk the egg whites until firm and form stiff peaks.
Second bowl
  1. Mix the egg yolks, coconut flour, salt, herbs and baking powder.
  2. Add the melted butter slowly, mixing to ensure it is a smooth consistency.
  3. Add the milk and grated cheese. Mix well.
  4. Gently fold spoons of the whisked egg whites into the yolk mixture. Try to keep as much of the air and volume as possible.
  5. Place enough of the waffle mixture into the warm waffle maker to make one waffle. Cook until golden.
  6. Repeat until all the mixture has been used.
