BACON COVERED MEATLOAF - ditch the carbs

BACON COVERED MEATLOAF

INGREDIENTS
  • 1 spring onion sliced
  • 2 crushed garlic cloves
  • 750g / 1.6 lb mince/ground beef
  • 750g / 1.6 lb mince/ground pork
  • 2 eggs lightly beaten
  • handful fresh chopped parsley
  • handful fresh chopped basil
  • 2 slices bacon diced
  • 30g / 1 oz chopped sun-dried tomatoes (optional)
  • 2 tsp dried oregano
  • +/- salt and pepper to taste
  • grated vegetables of choice can also be added
  • slices of bacon to cover the meatloaf
  • Optional - if not paleo you can add 100g / 3.5 oz grated cheese of choice to the meatloaf mixture
INSTRUCTIONS

  1. Oil and line a baking tray before starting.
  2. Put all the ingredients in a large mixing bowl and mix together with your hands until all the ingredients are thoroughly incorporated together.
  3. Form into a large meatloaf shape on the lined baking tray. Cover with the bacon slices and sprinkle on parmesan cheese (optional).
  4. Bake at 180C/350F for 50 minutes or until thoroughly cooked in the centre.
