INGREDIENTS
- 1 spring onion sliced
- 2 crushed garlic cloves
- 750g / 1.6 lb mince/ground beef
- 750g / 1.6 lb mince/ground pork
- 2 eggs lightly beaten
- handful fresh chopped parsley
- handful fresh chopped basil
- 2 slices bacon diced
- 30g / 1 oz chopped sun-dried tomatoes (optional)
- 2 tsp dried oregano
- +/- salt and pepper to taste
- grated vegetables of choice can also be added
- slices of bacon to cover the meatloaf
- Optional - if not paleo you can add 100g / 3.5 oz grated cheese of choice to the meatloaf mixture
INSTRUCTIONS
- Oil and line a baking tray before starting.
- Put all the ingredients in a large mixing bowl and mix together with your hands until all the ingredients are thoroughly incorporated together.
- Form into a large meatloaf shape on the lined baking tray. Cover with the bacon slices and sprinkle on parmesan cheese (optional).
- Bake at 180C/350F for 50 minutes or until thoroughly cooked in the centre.
