Breakfast Pizza - fortheloveofbanting.com


Low to No carb.

Flour-free.

Simple.

Affordable.

What more could you ask for? Oh, and its totally delish!!

Ingredients:

2 eggs

30ml cream

Salt and pepper to taste

Butter for frying

Cheese and toppings of your choice

Method:

Break eggs in a bowl and add cream, salt and pepper.

Whisk until frothy.

Melt butter in nonstick pan on medium heat.

Add egg and fry until the top has set.

Carefully flip and fry for a minute or two.

Put a plate on top and flip into the plate.

Add desired cooked toppings and microwave on high for 2 minutes.

Alternatively, put in an oven proof dish and grill in oven until cheese melted.

Serve warm and enjoy!

Hearty Oxtail Stew - fortheloveofbanting.com


Ingredients:

800g Oxtail

300g baby onions

3 large carrots

1/2 leek

1 punnet mushrooms

350ml red wine

salt and pepper to taste

2 tbs herbs

1 tbs coconut oil

Method:

Melt coconut oil in pressure cooker pot (alternatively, you can use haybag, normal pot on low or slow cooker).

To this, Add the oxtail, salt and pepper.

Brown the oxtail on all sides.

Clean the mushrooms, wash and peel the onions, same with leeks and carrots, and chop carrots into chunks.

Add the mushrooms, onions, leek and carrots and allow to "sweat off".

Add the Herbs and wine and top the pot up with water (Depending if you use a pressure cooker)

Allow to come to pressure if using a pressure cooker, turn the heat down to medium and cook for around 40 minutes.

Enjoy with roasted pumpkin and caulibroc rice!

Raspberry Frosting - fortheloveofbanting.com


Ingredients:

200g butter

4 tbs xylitol icing sugar

1 tsp vanilla

100ml cream

30ml cream cheese

12 raspberries

Method:

Place all ingredients in a food processor or blitz with a stick blender to combine!

What you're left with is an amazing cheesecake like frosting, perfect for a plain vanilla cupcake.

Cheesecake Frosting - fortheloveofbanting.com


Ingredients:

200g butter

4 tbs xylitol icing sugar

1 tsp vanilla

100ml cream

180ml cream cheese

60ml Lemon Juice

Method:

Cream together all ingredients until smooth

What you're left with is an amazing cheesecake textured and tasting frosting!

Pipe on top of cupcakes.

Creamy Chocolate Frosting - fortheloveofbanting.com


Ingredients:

200g butter

4 tbs xylitol icing sugar

1 tsp vanilla

100ml cream

75ml Cocoa

45ml Boiling water

Method:

Cream together butter and icing sugar ingredients until smooth.

Add vanilla and cream and mix together.

Add cocoa and mix.

Add boiling water to mixture, little by little and mix until smooth.

What you're left with is an amazing cheesecake textured and tasting frosting!

Lemon and Ginger Hot Toddy - fortheloveofbanting.com


Ingredients:

Juice and zest one 1 lemon

80g grated ginger

2-3 tbs xylitol (or to taste)

250ml water

Method:

Zest and juice one lemon.

Peel and grate ginger.

Add all ingredients to a pot, including halved juiced lemons.

Cook on medium heat for about 20-30 mins.

Strain and squeeze out as much moisture from the solid materials.

Allow to cool and store in cm glass jar or bottle in fridge.

To prepare hot toddy:

Place 3 tbs cordial to 200ml boiling water.

Mix well and drink once you can handle the heat.

So moist, so simple - a must try!

Ingredients:

1 tbs coconut butter

1/2 tsp baking powder

1 egg

Method:

Mix thoroughly until smooth.

Add to a mug or suitable microwave container.

Microwave on high for 90 seconds.

So moist, so simple - a must try!

Ingredients:

1 tbs peanut butter

1/2 tsp baking powder

1 egg

Method:

Mix thoroughly until smooth.

Add to a mug or suitable microwave container.

Microwave on high for 90 seconds.

Remove and slice

There are, however, a few things you need to know before you continue with the above recipe. 

Peanuts are high in omega 6 and excess amounts may cause inflammation. 

My suggestion would be 2 things:

1. Include pilchards in your meals on the day you have the peanut butter bread.

2. Don't have it daily due to the omega 6 content.

Ingredients:

1/2 head cauliflower

2 tbs cream cheese

20g cheese

Salt and pepper to tast

Method:

In a microwaveable bowl, cook cauliflower florets with a little water on high for about 8 minutes. Salt to taste.

Drain, place in a bowl with Remaining ingredients and blend using stick blender.

Cappucino Flapjacks - fortheloveofbanting.com

These were SO easy.

I got to try out a new premix by Banting Blvd. but because our oven is currently not working and the landlord hasn't fixed it yet, I found some new ways to use it!

Ingredients:

1 pack cappuccino mix

4 eggs

4 tbs xylitol or other sweetener

2 tsp vanilla

1.5 cups milk

Butter for frying

Method:

Mix all ingredients together until well combined.

Melt butter in a pan and allow to melt completely - make sure pan is on medium to high - not completely high. 

Drop tablespoons full into pan and allow to cook until some bubbles form.

Turn and cook for a few mins on the other side. 

Recipe makes about 24/25 flapjacks. 

Serve with butter and xylitol syrup or cream or berries.

Cappucino muffin in a cup - fortheloveofbanting.com

This premix is due to be launched soon from Banting blvd.

Ingredients:

3 tbs cappuccino muffin mix

1 egg

2 tsp sweetener

75ml milk, water, or coconut milk


Method:

Mix all ingredients together. Press down in greased mug and microwave it on high for 2 minutes. Allow to cool before slicing. :)
